Ox Tail Soup

  • 1 ox tail, 600-800g
  • 2 potatoes
  • 2 carrot
  • 1 tomato
  • 5 slices ginger
  • 3 tablespoon rice wine
  • 2 teaspoons salt

How to Cook

Bring a stockpot of water to the boil. Add 2 slices of ginger and 1 tablespoon of rice wine, add ox tail and boil for 5 minutes. Strain and set aside.

Place ox tail with 10 cups water back into the pot, add rest of ginger and spring onion, bring to boil, add 2 tablespoon rice wine. Reduce heat, simmer for 1.5 hours. During this time, skim any fat.

Peel off the skin of potato and cut into cubes, slice carrots and cut tomato.

Put potato, carrots and tomato into the soup, bring to the boil then reduce heat, simmer for 30-40 minutes. Add salt to your own taste.
