Ingredients
- Beef rump steak 400g (Sirloin preferable),thinly sliced
- 2 Red chilli, chopped
- 3 cloves of garlic,finely chopped
- 2 onion,chopped green parts and thinly sliced white part.
A. mixture of following ingredients for marinade beef
- ginger 10g finely sliced
- shaoxing rice wine 2 tablespoons
- light soy sauce 1 tablespoon
- mixture of 1 tablespoon water and 1 teaspoon corn flour
B. mixture of following ingredients
- light soy sauce 1 tablespoon
- oyster sauce 2 tablespoon
- shaoxing rice wine 2 tablespoon
- rice vinegar 1 teaspoon
- sugar 1 teaspoon
- sichuan peppercorn powder 1 teaspoon
How to Cook
To marinade beef, put beef into a bowl with mixture A, marinade for 20 minutes
Heap up a wok with 2 tablespoons oil until very hot, stir fry beef for two minutes over high heat. Add spring onion (green parts only), stir fry another minute. Remove with a wire sieve or slotted spoon and drain.
Repeat with 1 teaspoon of oil and add garlic and chilli, stir for 10 seconds, or until fragrant. Add mixture B and bring to boil, add beef back to wok and stir for a few seconds over high heat. Transfer beef to a plate, serve with sliced onion on top.
